White Chocolate Cake With Raspberries and Strawberries

This is such a wonderful cake! It was fun to make and even more enjoyable to eat. We had friends over and a special guest from out of town and I wanted to make it a special occasion and this was more than even I expected!


Here is what you need from bottom to top!


Cake:

  • 1 c. White Sugar
  • 1/2c. Butter
  • 2 Eggs
  • 2 tsp Vanilla 
  • 1 1/2c. flour  (can use 1c. all purpose and 1/2c. cake flour to be a it thicker)
  • 1 3/4 tsp Baking Powder
  • 3/4c. Milk
Preheat your oven to 350. Grease your favorite cake pan, { this recipe is also great for cupcakes!}.  In a medium bowl cream the sugar and butter 8-10 minutes.Next, add one egg at a time, make sure each is well blended, stir in the vanilla. Sift the flour and baking powder together and add it to the butter mix until it is smooth. Pour into your cake/muffin pan and bake for 30-40 minutes. Cake is down when it springs back. This is dense and resembles a wedding cake 'type',


Icing:

  • 1 [8oz] pckg Cream Cheese
  • 1 stick of Butter, softened
  • 1 tsp vanilla
  • 1 1/2c Powdered Sugar
Beat the cream cheese, butter and vanilla  until very smooth. Add sugar and blend until really smooth! Make sure your cake is completely cool before you add this icing because it will thin out.


Topping:

  • 3 oz. White Chocolate, shaved
  • 1pint. Raspberries
  • 3 oz. White Chocolate, melted
  • 1/2 lb Strawberries
  • 1 tbsp Vegetable Oil
Melt 3oz chocolate, add oil & mix. rinse Fruits. Spread out wax paper.  [Will need a toothpick or similar] Dip raspberries half way and place on paper.  Take your strawberry, cut the leaf off, place bottom down on counter, cut length wise almost [but NOT all the way through] to create a 'fan' shape and set aside. 


Assembly:


Remove cooled cake from pan, brush off the crumbs, add icing, clump half the chocolate shavings to the middle of the cake, place 3-4 raspberries around the chocolate or nestled, alternate the raspberries and strawberries around the edge of the cake, add the rest of the chocolate shavings to the cake and serve!

  1. that looks so scrumptious!!! mmmm. now I feel like I HAVE to make it NOW! that's one for the books for sure!
    My in-laws put raspberry jam inbetween layers of white cake sometimes and it's super! This makes me think of that. I wonder how fantastic it would be to mix the two!
