Banana and Almond Muffins with Granola!

OK! My sweet and dear friend loved my sweet treats however, she wanted her and her boys to stay more on the healthier side. I love getting their reaction so I instantly did some research for some good healthy recipes. I never use ANY recipe to a T, because I like it to be mine! So, This recipe in it original form is credited to some wonderful ladies that work with my mother.  Once you pop one of these delectables in your mouth you wont be able to stop! I added a few things to the recipe including the topping! My mouth is watering just remembering when I first pulled them out of the oven! Lets get down to it~!


Here is what you need from bottom to top!:

  • 3-4 Ripe Banana's [ the riper the better] 
  • 2 Eggs
  • 1stp Salt & 1 tsp Baking Powder [mix together, set aside]
  • 1 1/2c. Flour 
  • 1 stick Butter
  • 1c. Brown Sugar 
  • 1c. Sliced Almonds
  • 1tsp Vanilla
Microwave the bananas, covered with wrap and whole poked for ventilation, for 5 min. Remove. In a separate bowl [microwaveable ] add sugar, butter and vanilla, microwave for 1 minute. Remove and add sugar mix to the bananas. Mash and mix until smooth. Add eggs one at a time.  Add salt mix. Add Flour. Mix well. Add Almonds and blend until smooth. Place in greased and sugared muffin pan. Bake for 20-25 minutes depending on your oven.


For topping:

  • 2/3c. Oatmeal
  • 2/3c. Brown Sugar
  • 2/3c.  Sliced Almonds
  • 3tsp Vanilla
Combine all ingredients in a bowl and top the muffins before you bake them. Serve and Enjoy!! It is so Mmm...,Mmm...Good!
