Low(er) Carb Banana Bread w/Lemon Chenin Blanc Icing

Today I watched a new funny mess-of-a-show called "Nailed It". It's a baking show and I've not baked in some time!!!

So after organized some things in our room, I created my own banana bread recipe. The ONLY thing I knew for certain was that I was going to cook with our white wine.

Grab a glass of wine and preheat the oven to 375.

Low(er) Carb Banana Bread

4 very ripe bananas, peeled and microwaved for 1.5 minutes
2 large eggs
1/3 alternative granulated sugar + (1/8 cup to sprinkle on top)
2 tsp vanilla extract
1/2 cup almond flour
2 tbsp GF baking flour
1 cup low carb flour (carbquik)
1/4 cup flax meal
1 tbsp xanthan gum
1 tbsp baking powder
1/2 tsp real salt (can use sea salt)
1 bar organic dark chocolate, coarsely chopped (save this for the top)
1/2 cup of walnuts
1 tbsp raw cocoa powder

Mix everything together... VERY WELL... ok, this was too thick so I put more ingredients in it...

1/4 cup of fractioned coconut oil
1/8 cup of flat dr. pepper

Now mix with a hand mixer (unless you live in a house like I do and everything goes mixing...) then mix with a butter cutter (yes, it worked).

Butter a square baking dish (I used ceramic). Pour batter into your dish. Even it out. Scatter the chocolate chunks (if you accidentally put them in the mix, that is ok. If you have more on hand, you'll have a chocolate lovers bread). Sprinkle with the 1/8 cup of alternative granulated sugar.

Place it in the oven. Set your timer for 50 minutes.

Now, we make the icing...

Grab another glass of wine, here we go.

Lemon Chenin Blanc Icing
Lemon Juice from ONE lemon
2 tbsp heavy cream
2 tbsp Chenin Blanc
1 stick of butter
2 tbsp fractioned coconut oil

MIX this FIRST (again, I used the butter cutter and it worked like a charm)

Now add ONE cup of Powdered Sugar. Add more until it is the consistency you like.


50 minutes later...

Grab another glass of wine. What? I just...  forget it, drink it. Life is to short to be without wine.

Check your bread with a butter knife. If it needs more heat, bake it longer at 5 minute intervals.

Let it sit for 5 minutes. Use two small or flexible spatulas to transfer it to a proper dish. Let it sit 5 more minutes. Place the bread with the dish into your freezer for 20 minutes.

More wine anyone? Maybe a shot of something stronger? ;)

Pull out the bread. Heat up the icing for 30 seconds. Mix the icing. Drizzle it ALL over your bread. Let it sit for 10 minutes.

Take a bite....

Holy ORAL orgasm! (sorry kids and parents)

The flavors dance all in your mouth. It is soooo .... soooo .... SO good!

I bet lemon or even lime zest on top would be great!
